Vialone Nano is the preferred rice in the northeast of Italy. With medium sized, round grains, it still keeps firm after cooking, and is very suitable for risotto because it absorbs perfectly all the seasonings and large quantities of liquid and produce a soupy style risotto. It is also recommended for salads, and as accompaniment to fish dishes, or cooked with vegetables.
