Traditionally marinated with vinegar and a little salt, then preserved with oil, these anchovies bring a delicate flavour and fresh taste. Similar to the Spanish boquerones en vinagre, they are mild with a flesh that retains its white color. A real delicacy, they can be eaten alone as an aperitif or with some bread, or sprinkle with some fresh garlic and chopped parsley for a nice twist.
