Iberian Pork ham, also known as Pata Negra meaning Black Leg, from Spain, is a cured and dried for several years to bring up its unique flavour. Iberic Pigs, specific to the spanish peninsula, are small black pigs that are traditionally raised in semi-liberty. There are 2 primary ways of feeding the pigs, that are usually appended to the name of the ham: cebo (feed mix with acorn) and Bellota (100% acorn fed). The acorn fed pigs represent the top quality due to the additional unique flavor it adds to the ham.
