This pasta is made from durum wheat flour and cold spring water. The production technique and the machine used are the original early 1900: the cold dough is slowly mixed (45 minutes), then the rolled pasta comes through the circular bronze die, and it is laminated twice to reach the desired thickness. Finally the dough is cut 40 centimeters long for packaging.
