These high quality quails are partial deboned using the tunnel-boning technique. Called “cailles crapaudines” in French, this means carefully removing the bones from the body of the bird, while leaving the meat, skin, wing and leg bones intact, so that it can then be stuffed and make it look like it has all its bones.
